They weren't providing much value, and they fail on the latest Rust version because they create a Rust reference to null.

The only actual API change in this PR is the renaming of a few SymbolManagerConfig methods from
symbols_*tosymbol_*, e.g.windows_symbols_servertowindows_symbol_server.
