Upgrade Jest 29 and all the testing tools and fix the configuration, environment and all the tests.

All the changes are related to the upgrade of Jest and testing libraries we use.

This is the fourth sequential PR to eject CRA and move from Webpack. With this one, all our configuration is now exposed and working correctly, and all the libraries are up to date.
