Please note as of v1.132.0, immich switched to the valkey fork of redis, so that image source is also updated. see https://github.com/immich-app/immich/releases/tag/v1.132.0

please note as of v1.132.0, immich swiched to the valkey fork of redis. this PR updates the immich version as well as redis image to valkey.
