"Incognito" window and/or tabs?

Just an idea, but perhaps there could be an "incognito" window mode (or could otherwise be named differently if you think it would cause confusion), where any sensitive files etc can be opened with assurance that all AI-related features are completely disabled?

UX-wise it could behave similarly to a Chrome incognito window where the styling is different than usual to be clear its in a different mode

As for example, I use Copilot for most things, but it's a pain to sign out and sign in if I want to deal with something more sensitive. At the moment I have an additional text editor installed purely for this purpose.

As well, it would be good to have a way to open a file in this mode from the CLI also
