(RN77-NA) iOS: Enable snapshot tests for RN 77 new arch #8010

After the migration to the new arch with RN 77 the tests existing tests are not relevant anymore. We need to enable / rewrite them
Checkpoints
- Estimate the scope of the task.
- Enable tests on CI/CD.
- Make the first test work!
- Iterate to next test.
- Make them all work.
