Is it possible to view a process's manifest properties, such as longPathAware?

The only place I can find it is Strings. Is there a better parsed location in the GUI for seeing manifest information?

The application manifest is stored as a resource with type RT_MANIFEST in the resources of the PE file. You can inspect this currently by Tools > Inspection executable file... here:

I had seen that section, but I was hoping for an already parsed view like how everything else in the GUI seems to be. That particular view doesn't show the RT_MANIFEST properties without manually extracting it.

I think it's reasonable for us to extract RT_MANIFEST and display it as a tab (if present). Could you please open a features request?
