Sure v0.6.2 - First (mini-)Rebrand

Another small patch release along the way to a full rebrand, with a few interesting fixes included as well (export volume mounts, dark mode/UI tweaks, cleaner/more visible Sankey chart, etc.) Plus faster multi-arch Docker images/build!

On top of the 8 active contributors from a week ago, we have 5 new people that sent PRs that were merged! 💪

It seems there is no latest tag for this release. Should we move to ghcr.io/we-promise/sure:stable instead? Do you plan on discontinuing the latest tag going forward?

Standard issue is :latest pointing to latest stable build.

For those who wants ez updates standard is to create a tag such as :vX :vX.X vX.X.X
