It's quite a common editor setting, and it's probably an easy toggle in codemirror

@tmcw - is this easy to turn off? Do you think we should turn it off by default? I wonder if we should allow a bunch of settings like this one to be configurable in user preferences somewhere...

I think most editors keep in on by default, but I'm personally not a fan (and it often leads to duplicated quotes when used in association with github copilot)

This is pretty easy to toggle on & off - probably 1-2hrs to implement this from end to end.
