New to jstree and help validating and initializing

Hi,
I am new to jstree and from the documentation that I gather I can use it with ul li ordered list.
My first question is does the below HTML look suitable for jstree ( In short does ul hsving some text and ul not having text will it matter ?). I can change the HTML if someone can help point me in right direction.

Categories

• Sub_Category1


• Sub Category 2


• Sub Category 3




• Child of Sub Category 3




• Child of sub_sub_child






• Sub Category4

 The second question relates to initialization. I will basically like these <a href tags to be converted into clickable links as opposed to a button on click event as presented in the basic example.

Hi,
I was able to get some piece of it working. As attached and with slight change of the HTML code. However I still haven't been able to get the second level and 3rd level tree open up by default.
I have tried the following but did not work.
/* $("#document_category").bind('loaded.jstree' , function (event, data)
{
data.instance.open_all();
});*/
Relevant initialization of the tree is
