Consider migrating to Fumadocs

Docusaurus keeps breaking... and [Fumadocs](https://fumadocs.vercel.app/) seems much nicer.


Our docs themselves should work the same, and since we use the UI package, it should not break too many things, but that's a completely different engine, so there are questions to be solved!
