Move docs to MkDocs or Quarto #153
Description
MkDocs pros:
- Official IDM approach
- Better page tracking/feedback options
- Bigger community
Quarto pros:
- Nicer styling
- Consistent with Starsim docs
Either way, need to:
- Convert rst files to markdown (AI can do this)
- Add docs yaml config file
- Publish docs on GitHub Pages
- Add docs.stisim.org as custom domain on repo settings
