Satellogic EarthView STAC GeoParquet

Hey all,

I wanted to learn more about STAC GeoParquet and gain experience with the related tech so I created a STAC GeoParquet representation of the static STAC describing Satellogic's EarthView dataset containing 7.1 million images. I describe the process/experience in my repo here:
