Create Courses: Extraneous Newlines in Names

When listing a series of courses to be creating together in the create-courses.php script, newlines are being included in course and section names -- which will eventually really bork up LTI authentication down the road!

Made a quick fix that addresses the presenting problem, with some notes about the real, underlying (dumb) code that should be fixed to close this issue.
