Signature Request Explanation

When @PatrickAlphaC was setting up The Graph, he got a signature request (Timestamp: https://www.youtube.com/watch?v=gyMwXuJrbJQ&t=101306s).

I'd like to know more details about this: what exactly is it we're signing with our MetaMask, how can we create such a signature, are we signing over any access to anything with this signature?

A comprehensive explanation of this would be really helpful, and it seems really important, since I've seen many websites use such a signature (e.g. OpenSea).
