Make UI responsive

This is a story to make the UI responsive.  Currently it is locked at a fixed size with no way to resize windows.  In order to make that work, it is not as simple as unlocking window resizing - the components have to be put together in a view that is adaptive.  This is not a simple story to tackle for someone new to JavaFX or UI development in general.
