apostrophes (`'`) are displayed as `'` in link previews

Bug description

If the meta tag associated to a link shared in a message contains the character ' it is displayed as ' instead in the link preview. Has been tested with other messengers and they display the character correctly.

The bug is also present on Signal Desktop so it's likely a server side issue.

Steps to reproduce

• share a link who's meta tag contains the character ' (apostrophe).

Actual result: It displays ' instead

Expected result: It displays the actual character '

I don't have one that I can publicly share unfortunately. It occurred with a link to a file hosted on a self-hosted nextcloud instance where the nextcloud instance's subtitle contained the ' letter.

@sashaweiss-signal This bug sounds very similar to #6069. In that bug report, the reporter made a webpage and added malformed meta tags. If you need to reproduce something akin to this bug, that's a good place to start.
