Upgrade nginx to latest version (1.27)

Is it possible to upgrade nginx version in the image (fpm-nginx) ? Because actually the version is 1.26.2 but a vulnerability was fixed in nginx 1.26.3.
And why we don't upgrade to nginx 1.27 ?

It looks like Debian is on 1.26.3:

docker run --pull always -e SHOW_WELCOME_MESSAGE=false --rm serversideup/php:fpm-nginx nginx -version
nginx version: nginx/1.26.3

Alpine looks to be on 1.26.2:

docker run --pull always -e SHOW_WELCOME_MESSAGE=false --rm serversideup/php:fpm-nginx-alpine nginx -version
nginx version: nginx/1.26.2

The versions are based off whatever the operating system repos are set to. We have weekly updates to automatically pull these versions in.

I'd like to get this to where we could compile from source from an explicit version, but right now my time is being pulled elsewhere on the project.

Any other ideas, I'd love to hear them!
