Simple Dashboard #377

Is your feature request related to a problem? Please describe.
At the moment we don't have a good mechanism to understand the analytics around the platform. It would be good to have a dashboard.
Describe the solution you'd like
I think we should create a simple dashboard that can visualise the following.
- Chart with the number of registrations per day
- Chart describing the split of registration per day based on the University
- Number of applications per mentor
Let me know what others are thinking.
