Add support for arm64

The tooling currently has support for i386 and ppc in 32-bit and 64-bit variants, update this to support just x86_64 and arm64 as there are a number of differences between those two (a number of enum labels have different values).

Is this still yet to do? pyObjC 9.0.1 seems to work just fine on M-class machines :)

This issue is no longer relevant, but I do have a problem with the tooling: The repository suffers from a partial second-system syndrome. I've started on a new version that collects more information, but basically haven't worked on that for over a year (something something work stress something something). I still want to finish this version because it will enable some improvements in in PyObjC: the in-progress version has (incomplete) code to generate type stubs and documentation, and also collects the information needed to generate DeprecationWarnings at runtime (the basic machinery for which is present in PyObjC, but not the metadata updates).

The tooling I actually use is not the version on GitHub and still uses Python 2.7 (yuck).

Now that I'm typing this: I'm going to upload the tooling I actually use to a new repository with some documentation on how to use it.
