Stage 3b: Integrate newly refactored Riff-rtc packages in Riff EDU

This Epic is about taking newly refactored Riff-rtc packages (chat.js, dashboard.js, index.js) and incorporating them into Riff EDU, in order to stop having redundant code in Riff EDU that performs the same function as what is in Riff Platform.
