Add insecure registry when using containerd

Hi all,

When pulling an image from an insecure registry, without having any insecure registries configured, causes the pull to fail. I have tried adding the registry to /etc/containerd/config.toml but after the containerd service, it still did not work. I then tried to restart rancher desktop completely, but found out that the config file had been overwritten, removing my changes.

Am I missing something here?
