Handling data on a rotated pole grid

Hi All,

I am trying to work with EUROCORDEX data in xarray which has a rotated pole grid system. Upon plotting, the countries seem to be a bit shifted/moved from the country boundaries. Although, for plotting, the cartopy transform (PlateCarree()) seem to work, but for country level calculations, I am not being able to correctly geolocate the points within the country and getting erroneous values.
Can anybody suggest some lead to convert the data from the rotated pole grid system to regular lat-lon grid.
