Behavior with multiple servers for same language

On the README, it is said:

While it is possible to register multiple servers for the same filetype, some commands will pick only the first server that supports it. For example, it doesn't make sense for rename and format commands to be sent to multiple servers

This raises two questions for me:

• If some commands will pick the first server that supports the command, what is the order in which the servers are checked? And how can I change that order to prioritize the one I prefer?
• Some commands, like LspDefinition, list results for all servers (I'm guessing since I get duplicates for everything). Is there a way for me to select the server I want to handle each command?
