Mimir must reliably provide real-time chain data

I thought an end-to-end (e2e) test was necessary, so I created issue #422. However, what I'm actually aiming for isn't exactly an e2e test. Instead, we need a periodic check to verify that Mimir provides data consistently with the state offered by Headless and isn't delivering outdated data.

Although it may not qualify as a true e2e test, it can still fulfill the purpose of comparing data between Mimir and Headless in its current form.

So, I'll put further thought aside for now... It would be great to test all collections. I'll create an issue for each collection.

These updates are aimed at allowing users running Mimir's code to verify that the data aligns with actual data from uptime and headless.
Therefore, rather than using the Mimir repository, I created a separate repository, mimir-uptime, where we will conduct this discussion.
