Expand Dogfood Model

So far the dogfood model is a pytest that outlines the process thus far.

• We should improve this by using the time evolution of the wallets and proposal
• We should ask Shawn for further advice on how to proceed

1. By time evolution, are you referring to the item_epoch function or just running simulations ?
