Add Helm configuration instructions for AWS Spot Pricing

Override the [aws.json](https://github.com/opencost/opencost/blob/develop/configs/aws.json), look at https://www.opencost.io/docs/configuration/on-prem#custom-pricing-using-the-opencost-helm-chart and replace the aws.json instead of the default.json
