UERANSIM released a new stable version

The file deploy-UERANSIM.sh should be updated and tested against the v3.2.7 stable version of UERANSIM

Additional context
As I was already using a nightly version of UERANSIM, using the latest stable should not be a problem.
Any other scripts that use UERANSIM might be also verified.
