soma-forge does not build with Python 3.12

There is, at least, a problem with sip. I will give more information later.

I will not force Python version in Pixi to be able to choose any version before compiling. But since the highest version will be taken by default when #5 is fixed, I will add a Python selection version in the setup procedure.

I tried to see if it is still an issue but could not because we added a missing dependency on nipype but it can only be installed with Python 3.11. Therefore it is hard to set up a non empty soma-forge environment with Python > 3.11.
