Compose/.env contents dont match in the UI vs CLI

Maybe im just loosing my mind or maybe something else going on. I was setting up SSO for Paperless today with Kmodo. I noticed that the changes i would make in the Komodo UI for the compose and .env file weren't always reflected in the compose and .env file on the host. If i make a change in the UI, Save, Restart the container, the change wouldn't take. When i make the same change via CLI on the host, save and start the container, the change would take. That's my call me crazy/stupid/misinformed question for the day. Anybody else experience this? Am i doing something wrong?
