Moddy SaaS setup docs #316

Unless I'm missing something, there's nothing in our docs that details how customers can configure Moddy in their SaaS tenant. <https://docs.moderne.io/administrator-documentation/moderne-platform/references/ai-architecture#deployment|This section> says:
> Deployed as part of the Moderne Platform. Moderne customers can choose whether or not to enable this AI agent in their tenants.
But does not detail how or link to any other pages that have this detail. The <https://docs.moderne.io/administrator-documentation/moderne-platform/how-to-guides/agent-configuration/agent-variables|All Agent Variables> page doesn't have these details either
