Update README #14
Description
The project currently has a large number of yaml files. It would be very helpful if the README outlined:
- What each grouping is for (e.g. rhel-8-appstream-*)
- How they fit together
- What the "top level" projects are (if that's a thing?)
- How contributors should interact and update the yaml files
