Update `gt` vignette

rstudio/gt#1314 made classed colour vectors compatible with gt::data_color() without requiring the workaround to cast to a character vector first. Once the next CRAN version after gt 0.11.0 is published, I can update the gt vignette to demonstrate this new behaviour (and also bump the minimum gt version in DESCRIPTION).
