customize markdownify()

• would be nice if markdowinify() were customizable
• actually, what I really want is to parse the wiki/InterMapTxt file from the db and use that 👍

I propose to extract markdownify() as an extra module in an extra file. Then one can monkey patch it.
As far as I know trac wiki sysntax stems from creole. So Maybe we could incorporate https://pandoc.org/ for the conversions.
