Add installation instructions for Jetson 7 with DeepStream 8 (Thor support)

Hello maintainers,

Thank you for maintaining this project. It has been very helpful for the Jetson and DeepStream community.

With the release of DeepStream 8 and support for Jetson Thor (Jetson 7 series), it would be great to update the documentation with installation and build instructions for this new setup.

Specifically, I’d like to contribute by adding:

• Steps to install and build deepstream-yolo on Jetson Thor devices with DeepStream 8
• (Optional) Notes on any differences compared to previous versions, if relevant

Would you be open to me submitting a PR to add these instructions to the README (or a separate docs/ file)?

Sorry, I don't have a Thor board, so I don't have a way to test the steps for the installation.

No worries. I do have access to a Thor board with DeepStream 8 and have tested the installation steps. The changes required are minimal (mainly updating the CUDA version and a few other details), so it would just be a small update to the README.

I’d be happy to submit a PR with these instructions so others using Jetson Thor can benefit as well. Would you be okay with me opening a PR for this?
