Can't seem to get the launchctl to work on Big Sur

I have tried to run it manually:

launchctl start com.bing-wallpaper-daily-mac-multimonitor.plist

and getting in system.log

I can see that Service exited with abnormal code: 1 comes from the exit 1 in bing-wallpaper.sh#L154 or bing-wallpaper.sh#L162.
If I get it right an exit 0 would be appropriate – because there is no error that happened.

The lines

<key>OnDemand</key>
</true>

do not seem to have an effect and I removed them.

With these two changes /var/log/system.log doesn't show any further related log entries. And the picture is downloaded once I run launchctl load -w ... I did not test setting the image as background though (that is because I am only interested in the image).

I have tried to run it manually:

launchctl start com.bing-wallpaper-daily-mac-multimonitor.plist

@andjelx instead of using start I triggered the script using launchctl unload -w <plist> and launchctl load -w <plist>. Maybe you could try this as well..
