[feature] better tables!

there are a few major issues with the "default" table structure.

1. they don't play well with mobile, for reasons unknown.
2. there isn't a good way to control column width if i'd like it to be a small miniature table and/or a table with specifically wide columns or rows
3. there is no way for users to sort them when i add information into the table
4. there's no way to easily apply highlights to specific cells, rows, or columns

i would like to fix these! a decent example of a tabular structure that is good is samsara; i do not think it is particularly flexible, but that's the kind of thing where i'd love if we could land. some lightweight stuff with clear controls that doesn't require a ton of fussing. (i also need to fix the CSS for the existing markdown tables tbh)
