Is there a way to customize the diff command being used?

For example when you perform a git diff on a file, you may see a view that looks like this:

Lately I've been using delta for diffs and git diff returns:

I'm wondering if it's possible to customize whatever is being used to produce the diff in the first screenshot. I would really like to see delta's output there.

Gitsigns does not use git diff it uses a built-in diff API vim.diff().

Gitsigns also doesn't produce the screenshots you are seeing. It just provides signs in buffers.
