doc: Show documentation only for major releases

Describe the issue

Currently KubeStellar official doc is showing minor and unreleased branch documentation.
Please show only latest major releases on the official site to keep it clean and more accessible.

This is largely an artifact of the mkdocs + mike automation we use to generate our web documentation pages. It defaults to displaying the (I believe) release tagged as stable. The most recent main branch docs are labeled "unreleased-development" on the website until a release is done.

versions can be deleted but it is a manual process via mike rather than an automation.

All this is intended as information rather than a pro or con comment on the issue.
