docker-compose.yml optimizations

Hi i noticed a few things in the docker-compose.yml that could be improved.

• currently the the dbs are publicly exposed which is completely unnecessary as they are accessed over the docker internal networks.
• since you recommend a proxy it's not even needed to expose the web and api containers. instead i would not expose them at all and have a docker-compose.override.example.yml that has just the ports specified for web and api which could then be copied in place by people who need to access them externally because they don't have a proxy in docker
• why create the networks externally? it would work just as well to let docker-compose create them and makes the setup simpler
• volumes and networks have inconsistently set the name attribute
