Improve usage experience

Reduce the default logging to only contain important information.

In the meanwhile, things improved already a lot. But on the other hand, instead of silencing the logs too much, we should improve the instructions to use -d / --detach or propose to use docker desktop, where it can be seen if a container didn't start successfully.
