Update Github Action - re-enable Codecov reporting #1

I have just disabled the code coverage reporting, due to experiencing this error:
Codecov failure: Bash script checksums do not match published values. Please contact security@codecov.io immediately.
The Bash script for this is being deprecated. We need to update our process here.
