I'd be interested in a minimal example how to use layouts (e.g. a two side-by-side windows with some sample text each).

Just check the existing layouts?

:lua Snacks.picker.picker_layouts()

It shows the actual layout and code.

For the next person looking to modify the layout, after using :lua Snacks.picker.picker_layouts() and seeing the specs of each layout, you can overriding the default specs like so (overriding default layout in this example)
