Use LazyPluginSpec type annotation

I added the LazyPluginSpec type annotation to a plugin under /lua/plugins/example.lua but I've noticed the

I noticed the [1] and name and some other fields don't support auto-complete or type definitions.

Is there a better way to annotate this for better auto-complete type support? I did some research and it seems like Lua types may be limited.

That;s because it's a recursive type. Lua-ls has issues with that

Bummer, after experimenting with it I discovered those issues.
