Installing latest stable version of plugins does not always work

I've set the default version via

require("lazy").setup({
    ...
    defaults = {
        version = "*", -- Use the latest stable version for plugins
    },
})

But this setting does not seem to work in most cases.
For my setup it seems to only work for lazy itself, vim-kitty, nvim-nio, loremipsum and copilot.vim.
For all other plugins no version is found automatically and the option has to be set manually, e.g. for nvim-lspconfig.

How do I set this option in a way that it is applied to all plugin specs?

Sorry for the confusion, I did not realize that defaults was defined in another table, works as expected.
