I want to know how to find when a transaction was mined.

You can fetch the receipt for the transaction (provider.getTransactionReceipt) which will have a timestamp property.

Was the timestamp property removed in a subsequent release? I can't see it here, as of v5.6.4:

If timestamp is undefined in the tx receipt, then you'd have to fetch the block and use the timestamp there.

Cannot find TransactionReceipt.timestamp on v5.7.0. Did that exist / was it removed?

I think there was a typo in @ricmoo's answer. Standard ethereum clients do not include timestamp in the transaction receipt, so ethers.js cannot provide timestamp in receipt without overhead of additional network request. The receipt contains a block number value which you can use to fetch timestamp.
