Vite is Epic! (Epic Stack now uses Vite) 🚀

I'm excited to announce that with the official Remix vite plugin becoming stable, the Epic Stack now uses Vite! 🎉

You can find the deployed version of the app running on vite here: https://www.epicstack.dev/

And the template has been updated with this PR: #624

Interestingly the build is quite a bit slower (4 seconds instead of 2) 🤷‍♂️ But HMR is at least twice as fast which I'm definitely willing to accept a few extra seconds on the build for.
