Feature request: Notification E-Mail for unprocessed request on a regular basis #112

Hello,
thank you for this great plugin. We use it for a big number of parents courses at school to have an easy management. With the more simple self enrolment we had justified privacy protection complaints.
Unfortunately notification-emails are sometimes ignored by our teachers in the flood of daily emails. As an admin it is therefore my task to visit the site administration page with the "enrol confirmation" overview regularly and send reminder emails to our teachers. This is really annoying.
Therefore it would be very nice to have a background task that looks for unprocessed requests and resend a notification email on a regular basis. I would appreciate a weekly execution. It would be even better, if the admin could adjust the recurrence interval.
