Chore: make sure all model providers work, make model provider UI nide

The model provider UI is pretty hacked together and needs to be nice. We should be able to switch between model providers. On the backend we have a plugin-inference which manages inference to a set of different providers. The goal is to make sure this works end to end and all providers work in-game. Will need to be tested with OpenAI, Anthropic and Groq
