docker image for macOS / pytorch with support for mps in image

Hi,

I see there are 3 docker image, simple, CPU, and CUDA, could there be also one for macOS that supports mlx? In my tests I noticed that using pip install and running docling-serve did use the GPU contrary to the simple image container, it was also 2.5x faster. Could maybe be as simple as installing pytorch with mps support instead of CUDA?

All the images (docling-serve, docling-serve-cpu, docling-serve-cu124) should have all requirements for running on macOS with accelerators. The only difference are the nvidia drivers needed by pytorch.

I would suggest the smaller docling-serve-cpu image.
