Docling lightweight version (CPU only)

Hi, I am a barefoot developer using Docling and I wonder if it would be possible to imagine 2 Docling versions:

1. the current version with GPU acceleration
2. and a lightweight version working on CPU only (without the heavy package like Pytorch, CUDA, etc..)?

Pytorch is actually required also for CPU processing and Docling itself doesn't strictly require CUDA packages.

A useful trick is using the cpu torch index which doesn't bring the extra dependencies, e.g.

pip install docling --extra-index-url https://download.pytorch.org/whl/cpu
